The Bartlett cheese is a soft, mould-ripened cheese with a wrinkled, creamy- coloured, finish.  The cheese ripens over a period of 3 to 4 weeks as the moulds and yeasts digest the fats and proteins. Made with milk from sheep, it generates a taste that is both dense and smooth. The flavouring produces a nice buttery taste with the subtle tang of dried tobacco leaf.
